I don’t know how to cook very many things. If I tried, I’m sure I could. Well, I know I can, because a few friends and I used to do weekly dinner nights. However, I don’t cook much.

Buuuuut. I do bake. On occasion.

The other day the warm weather inspired me to try my hand at one of my favorite summertime treats. I triumphed! So I pass it on to you.

Do you want homemade ice cream sandwiches?

First start with the cookies. You combine one package cake mix (I use Devil’s food cake for chocolate, but you can make any flavor you want), two eggs and *either* 3/4 cup shortening or 1/2 cup oil.

Mix those all together. It will not be a batter consistency. It’s much less fluid. Roll them into smallish balls. Probably between one to one and a half inches in diameter. Put them on a greased cookie sheet and smush the top down a little with a spoon, so that they’re 1/3 to 1/2 as big as they were.

Bake at 375 degrees for 9 minutes. The center of the cookie should be kind of puffed up and cracking. Take them out and let the cookie cool for one minute on the sheet and then put them on a cooling rack.

They should look like this. (Sorry I didn’t take pictures of the first steps. I only thought about blogging this after I tasted the deliciousness.) I’m not totally sure, but I think one batch makes 20 ish cookies. I made a double batch and I’m pretty sure I got 40 cookies and used 2/3 a gallon of ice cream.

Then let them cool fully. This is important. In fact, just leave them alone for a day. Maybe eat a couple with a glass of milk. But then leave them alone. Kemi, keep them out of reach of Anthony. Or put them in something, cover with foil and hide them. For anyone else wondering what I’m talking about, this says it all…

Then leave a thing of ice cream out on the counter to get a little melty. Not puddly. But a little melty. I left a gallon out for 30 minutes ish and it was about right.

Pair the cookies up by size. Try and get cookies of approximately the same size. Then, if you don’t have a helper, lay out several squares of plastic wrap out on the counter and put the cookies upside down on them. If you do have a helper, they can put out the plastic and lay out the cookies while you scoop.

Take an ice cream scoop and put about 2/3 to a whole scoop on one cookie. Put the other cookie on top and smush it down a little. This is why you want the ice cream kinda melty. If it’s too hard, you’ll just break the cookies.

Wrap it up in the plastic wrap. My mom likes to stick them in an old bread sack because they stack nicely, but I didn’t have that foresight. You can use any bag to put them in. Or no bag at all, I suppose.

    It’s 9:15 AM and I wish I had one (or three) of those for breakfast.

    I think I found tonight’s dessert. Who cares if it’s raining and 40-some degrees? :D

    I may have to borrow my neighbor’s freezer, though, to ensure their safety. (I’m totally talking about ANTHONY, not me. ha ha)
